Most teams start by self-hosting a model in-house. On paper it's full control. In practice it's a relentless infrastructure and ops burden that's rarely sustainable, and you stay capped by whatever you can run. Of the options that remain, each forces a trade-off: EU-hosted alternatives keep your data in Europe but trail on capability, and often carry foreign capital that has a seat at the table.
